Crude oil is a dark, sticky liquid which, scientifically speaking, is classified as a hydrocarbon.

This means crude oil is a compound containing carbon and hydrogen, with or without non metallic elements such as oxygen and sulfur.

Crude oil is highly flammable and can be burned to create energy. Along with its sister hydrocarbon, natural gas, derivatives from crude oil make an excellent fuel.
Crudes from different sources have different make-ups. Some may have more of the valuable lighter hydrocarbons and some may have more of the heavier hydrocarbons. The compositions of different crudes are measured and published in documents.
The refinery uses the information in these documents to decide which crudes it will buy to make the products that its customers need at any given time.
When crude oil comes out of a well (especially an undersea well), the crude oil is often mixed with gases, water and sand. It forms an emulsion with the water that looks a bit like caramel.
